Olive and Lemon Roasted Chicken

Ingredients
  

  • 2 Medium Lemons thinly sliced seeds removed Reserve 1/4 of a lemon for finishing.
  • 1 Pound Olives pitted of your choice or mixed
  • 4 Fresh Thyme Leaves
  • 1/4 Tsp. Red Pepper Flakes
  • 3 Pds Chicken Tenderloins or breasts

Instructions
 

  • Salt and Pepper Chicken. Sear in hot pan for approximately 1 minute each side. Add oil if needed depending on your pan, Continue to all chicken is seared. Place all chicken back into pan. Top with remaining ingredients. Bake at 425° for approximately 20 minutes or until chicken is done.
  • Remove thyme leaves. Zest with lemon or squeeze fresh lemon juice on top.
