Strawberry Balsamic Pasta Salad
Easy and delicious cold pasta salad that is perfect as a side or delicious light meal!
Ingredients
Strawberry Balsamic Pasta Salad
- 1 pound dry penne, cooked al dente
- 3 cups baby spinach
- 1 cup sliced strawberries
- 1/2-1 cup feta cheese
- 1/4 cup sliced almonds
- Salt & Pepper to taste
Balsamic Vinaigrette
- 1/4 cup Extra Virgin Olive Oil
- 3 tbsp. Balsamic Vinegar
- 2 tbsp. Honey
- 1 tsp. Dijon mustard
- Salt & Pepper to taste
Instructions
Salad
- Drain cooked pasta and fold in spinach. Let cool.
- Place remaining ingredients into bowl and toss with my Balsamic Vinaigrette.
Vinaigrette
- Mix all ingredients together. Mix well.

NOTE:
If adding chicken, cut 2 chicken breasts into bite-size pieces. Salt and pepper chicken. Pan fry for approximately five minutes or until cooked. Let cool. Toss into salad.
