Sous Vide New York Strip

Getting your preferred temperature every time.


Sous Vide may seem intimidating, but it is a great simple method. Sous Vide is a technique of cooking food in a bag by leaving it in a temperature controlled water bath. You can infuse your steak with ingredients (fresh herbs or rubs) giving it your preferred flavor or for me the beauty of just salt.

This method of cooking used to be reserved just for restaurants but now can be used at home with affordable sous vide models. The temperature you set your sous vide water bath will be the internal temperature that you are looking to achieve. Cooking time should be a minimum of one hour but I found 2 hours is best. Although you technically can’t overcook your steak, I found the texture does change a bit if over 4 hours.

Sous Vide New York Strip Steak

Equipment

  • Sous Vide

Ingredients
  

  • 2 New York Strip Steaks
  • 2 tbsp. Salt
  • 1 tsp. Pepper
  • Optional Rubs, Butter and Herbs

Instructions
 

  • Season your steaks and place in food storage bag or vacuum seal. If using food storage bag, use the water displacement method to remove as much air out as possible. Set aside.
  • Prepare your sous vide water bath and set to desired temperature.
  • Clip the bag into the water bath and let cook for about 2 hours.
  • Once done, remove the strip steak and sear on skillet, grill pan or on grill. Approximately 1 minute on each side to create a beautiful seared brown texture. Let rest 5 minutes.
