Pepper Rice
Stuffed peppers done with a twist. Dicing your peppers not only makes it easier to proportion for freezing meal preps, but I found my family enjoys the meal better than a full pepper (was usually left on plate lol). You also don't have to par cook your peppers with this method!
Ingredients
- 1 lbs ground beef
- 4-6 peppers yellow, red and orange diced or cut in half
- 1 small red onion optional
- 2 cups instant rice uncooked
- 2 tsp fresh cut basil or died Italian seasoning
- 1 tsp sugar
- 2 can tomato sauce
- ½ cup ketchup
- 1 cans diced tomatoes undrained
- 6 oz pkg. cheddar cheese
- 8 oz grape tomatoes halved
Instructions
- Cook beef is done. Drain and add to a large bowl.
- Add remaining ingredients. Stir.
- Bake 350° for approximately 35 minutes.
