Penne Pasta Vegetable Salad

Delicious and easy recipe to make by adding your favorite vegetables! Feel free to add any of your favorite vegetables.

Ingredients
  

  • 2 cups uncooked penne pasta
  • 15 ounces marinated artichoke hearts
  • 1/2 cup red peppers diced
  • 1/2 cup orange peppers diced
  • 1 cup cucumbers diced
  • 1 pint grape tomatoes halved
  • 6 ounce can black olives drained
  • 1 tsp lemon pepper
  • 2 tbsps lemon juice
  • 1/4 cup chopped fresh parsley
  • 1 cup crumbled feta cheese

Instructions
 

  • Cook penne pasta as directed. Drain and let cool.
  • Drain artichoke hearts and reserve liquid to dress salad.
  • In large bowl combine all ingredients. Drizzle with reserved artichoke marinade and toss. Refrigerate for about an hour.
