Olive and Lemon Roasted Chicken
Ingredients
- 2 Medium Lemons thinly sliced seeds removed Reserve 1/4 of a lemon for finishing.
- 1 Pound Olives pitted of your choice or mixed
- 4 Fresh Thyme Leaves
- 1/4 Tsp. Red Pepper Flakes
- 3 Pds Chicken Tenderloins or breasts
Instructions
- Salt and Pepper Chicken. Sear in hot pan for approximately 1 minute each side. Add oil if needed depending on your pan, Continue to all chicken is seared. Place all chicken back into pan. Top with remaining ingredients. Bake at 425° for approximately 20 minutes or until chicken is done.
- Remove thyme leaves. Zest with lemon or squeeze fresh lemon juice on top.
