Grilled Peach, Arugula, and Burrata Salad
Perfect summertime salad with peaches being at their best! Sweet and savoury! Grilling creates a juicer, sweeter peach with a touch of smokiness. Paired with creamy burrata, and peppery arugula, this combination will soon be your "go to" summer salad. Dress with EVOO and balsamic, citrus vinegarette, or homemade sweet peach vinegarette. Can be a great side with chicken or fish or as a light meal.
Ingredients
- 2 ripe, but firm peaches
- 2 cups arugula
- Extra Virgin Olive Oil
- Balsamic glaze
Instructions
- Cut peaches in half and remove the pit. Slightly oil your peaches or grill pan. Place on hot grill cut side down. Grill until grill marks form approximately 1-2 minutes. Flip and add burrata cheese into each cavity. Grill for another 1-2 minutes.
- Scatter arugula onto serving platter. Place peaches on top.
- Add chopped pecans or walnuts if desired.
- Dress with EVOO and balsamic glaze. I also will dress with my Sweet Peach Vinegarette.
