Basil & Lime Cookie
Basil and Lime? Yes! Unique twist to brighten up your basic sugar cookie! I love the easiness of using pre made dough.
Ingredients
- 1/2 cup Softened Butter
- 1/2 tsp. Vanilla Paste or Extract
- 3/4 cup Sugar
- 1 Egg
- 1 Zest Lime
- 3 Tbsp. Fresh chopped Basil
- 1 3/4 cup All Purpose Flour
- 1/2 tsp. Baking Soda
- 1/2 tsp. Freshly Ground Kosher Salt
Instructions
- Preheat oven to 375°
- Using a mixer, cream together butter and sugar.
- Add the egg, vanilla, zest and basil. Mix.
- Add the flour, baking soda, and salt. Mix.
- Using a 1" cookie scooper, place on baking stone lined with parchment paper. Bake as directed approximately 8-12 minutes. Let cool. If wanting to make cookie dough prior to shaping, roll in saran wrap and place in refrigerator for about 10 minutes. Scoop dough and roll into 1" dough balls about 1 inch apart on a cookie sheet. Bake as directed.

Absolutely fabulous to freeze! Pull out as needed. I also have substituted the zest of lime with lemon zest….great option!
