Homemade Crespelles
Super easy to make! Crespelles have a light pillowy texture. Perfect to replace pasta for your stuffed dishes and lasagna. They are an Italian crepe. This is the savory recipe to making for your pasta dishes. To make a sweet crespelle, add 2 tsps. of sugar. Makes 12-14.
Equipment
- 6-8" nonstick crepe pan or skillet
Ingredients
- 1 cup all-purpose flour
- 1 1/2 cup water
- 2 eggs
- 1/2 tsp Freshly Ground Kosher Salt
- 1 tsp Extra Virgin Olive Oil
Instructions
- Whisk all ingredients together.
- Heat a 6-8" crepe pan or skillet on medium heat.
- Pour 1/4 cup of of batter into pan. Swirl with wrist to cover evenly. Cook about 20-30 seconds. You should easily be able to pick up crespelle to turn with a spatula. If not, let cook a few more seconds.
- Flip and cook for approximately 5-10 seconds. Variance of time is due to heat of pan.
- Remove from pan and place on a plate. Continue to batter is used.
