Penne Pasta Vegetable Salad
Delicious and easy recipe to make by adding your favorite vegetables! Feel free to add any of your favorite vegetables.
Ingredients
- 2 cups uncooked penne pasta
- 15 ounces marinated artichoke hearts
- 1/2 cup red peppers diced
- 1/2 cup orange peppers diced
- 1 cup cucumbers diced
- 1 pint grape tomatoes halved
- 6 ounce can black olives drained
- 1 tsp lemon pepper
- 2 tbsps lemon juice
- 1/4 cup chopped fresh parsley
- 1 cup crumbled feta cheese
Instructions
- Cook penne pasta as directed. Drain and let cool.
- Drain artichoke hearts and reserve liquid to dress salad.
- In large bowl combine all ingredients. Drizzle with reserved artichoke marinade and toss. Refrigerate for about an hour.
