Great alternative from traditional spring roll fillings! Sometimes the simplest of pairings make the most delicious appetizer. Getting use to the rice paper at first can be challenging but laugh your way through and grab another.
After one or two you will get a hang of it. The temperature of water I found is the trick. Not too hot and not to cold. You should be able to put your fingers in it but definitely warm! Have fun and enjoy!!

Chicken, Strawberry and Arugula Spring Roll
Fabulous take on Spring Roll inspired by one of my favorite salads! Add this easy strawberry yogurt with poppy seeds dipping sauce and this is a home run. Easy and Delicious!
Ingredients
Spring Roll
- 6 Rice Paper
- 1 Lbs. Chicken breast diced
- 1 Cucumber julienned
- 1 Cup Strawberries
- 1 Bunch of Arugula
Strawberry Yogurt Poppy Seed Dressing
- 5 Oz. Strawberry Yogurt
- 1 Tbsp. White Wine Vinegar
- 1 Tsp. Honey
- 1½ Tbsp. Poppy Seeds
Instructions
Strawberry Poppy Seed Dressing
- Combine all ingredients and set aside.
Chicken, Strawberry and Arugula Spring Roll
- Lay out all Spring Roll ingredients for assembly. Fill a large bowl with very warm water. Lay one rice paper in bowl and soak for about 15 sec. or until pliable. Lay on ceramic plate and spread evenly. Working with closest side to you leaving about 1" perimeter, create a small pile of the arugula, cucumber and strawberries. In front of pile, lay a small amount of chicken. Begin rolling covering your pile. After one revolution, fold each side in like a burrito. Roll over chicken and then complete rolling.

Other proteins can be substituted for the chicken. I also use a small amount of prepackaged frozen diced chicken that I can just grab a handful to defrost.
