Avocado Spring Roll with Miso Sauce

Refreshing and healthy.


Great alternative from traditional spring roll fillings! Sometimes the simplest of pairings make the most delicious appetizer. Getting use to the rice paper at first can be challenging but laugh your way through and grab another.

After one or two you will get a hang of it. The temperature of water I found is the trick. Not too hot and not to cold. You should be able to put your fingers in it but definitely warm! Have fun and enjoy!!


Refreshing change! These were a huge hit! Fresh avocado, red cabbage, and fresh mint with optional protein become a great appetizer or a side!

Avocado Spring Roll with Miso Sauce

Fresh take on traditional Spring Roll using avocados, red cabbage and sesamee seeds.

Ingredients
  

Miso Sauce

  • 1 ½ Tbsp Red Miso Sauce
  • 1 Tsp Honey
  • 1 Tbsp Rice Wine Vinegar
  • 1 Tsp Soy Sauce
  • 1/2 Tsp Sesame Oil

Spring Roll Ingredients

  • 6 Rice Papers
  • 1 Avocado Sliced into 6 even pieces
  • 1/2 Cup Julienne Red Cabbage
  • 3 Tsp. Sesame Seeds approx. ½ tsp. sprinkled per roll
  • Fresh Mint

Instructions
 

Miso Sauce

  • Whisk together all ingredients in a small bowl. Set aside.

Spring Roll

  • Lay out all Spring Roll ingredients for assembly. Fill a large bowl with very warm water. Lay one rice paper in bowl and soak for about 15 sec. or until pliable. Lay on ceramic plate and spread evenly. Working with closest side to you leaving about 1" perimeter, create a small pile of the red cabbage, avocado, sesame seeds and mint. Begin rolling covering your pile. After one revolution, fold each side in like a burrito. Complete rolling.
